And every backyard grillmaster worthy of their seasoned salt keeps a few easy – but delicious – recipes in their chef’s apron pocket, like these recipes from Chef Jim Nadeau. So fire up the grill! These are meals your family will want every night, but they’re just as great for entertaining.
And yes, it’s easy to mess up the grill no matter how good you are with the tongs. Nadeau, who is executive chef at the Jorgensen Plaza / Diamond Event Center in Cedar Falls, shared his grilling tips for avoiding these mistakes.
Grilled marinated chicken breast with fresh mozzarella and grilled beef steak tomatoes
4 fresh chicken breasts, 5 ounces each
1 Gallon Zippered Plastic Food Storage Bag
4 slices of 1 ounce Belgioioso Mozzarella cream cheese
1 large beef steak tomato, cut into 4 slices
Place 4 chicken breasts in the zippered plastic bag and add the Italian dressing. Marinate for at least 30 minutes, or overnight in the refrigerator.
Place the chicken breasts on the grill and cook 4 minutes on one side. Flip the chicken breast over to the other side. Spray the tomato slices with cooking spray and place on the grill. After 2 minutes, turn the tomatoes. After 4 to 6 minutes, turn the chicken and check the internal temperature with a meat thermometer inserted in the thickest part. It should read 165 F.
